Ingredients
1 lbs organic ground beef
¼ cup breadcrumbs
3–4 tbsp reduced-sodium beef broth
1 large egg
¼ cup finely shredded carrot
¼ cup finely shredded zucchini
¼ cup grated cheese
2 garlic cloves, minced
Pinch of salt & pepper (to taste)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
(or lightly grease a baking dish).In a large bowl, combine ground beef, breadcrumbs, broth, and egg.
Add the shredded carrot, shredded zucchini, grated cheese, minced garlic, salt, and pepper.
Gently mix until just combined — avoid overmixing to keep the meatballs tender.
Roll into small meatballs (about 1½ inches each) and place on the prepared baking sheet.
Bake at 400°F for 25 minutes, then transfer the cast iron to fry the meatballs and create those crispy edges (careful - the pan will be very hot!).
