The filling uses naturally sweet Honeycrisp apples, plus coconut sugar and cinnamon for that classic pie flavor. And instead of a heavy top crust, we use a simple almond-flour crumble made from the leftover dough. It’s wholesome, warm, and perfect for two to three people… or one very happy snacker.
🍎 Ingredients
Crust + Crumble (Gluten-Free)
1 egg
1 ½ tbsp maple syrup
1 ½ tbsp melted coconut oil
1 ½ cups almond flour
→ Reserve about ⅓ cup of the mixed dough to use as the crumble topping.
For Dusting the Bottom
Sprinkle of coconut sugar
Sprinkle of ground cinnamon
Apple Filling
1–2 large Honeycrisp apples, sliced
1 tbsp flour (or gluten-free flour)
ÂĽ cup coconut sugar
1 tsp cinnamon
Optional but recommended: Sprinkle the sliced apples with coconut sugar and soak overnight for extra softness and flavor.

🍏 Instructions
1. Make the Crust
In a bowl, whisk together:

maple syrup
coconut oil
Add the almond flour and mix until a soft dough forms.
Press the dough evenly into your greased 6-inch pie pan, reserving about â…“ cup for the crumble topping.
2. Blind Bake
Bake the crust at 350°F for 5 minutes.
This helps the bottom stay firm and prevents sogginess.
3. Add Flavor to the Base

4. Make the Apple Filling
In a bowl, combine:

5. Assemble the Pie
Add the apple filling into the crust.
